Rhubarb is in season now, so there is no better time to have a go at this dish.

Ingredients

  • 4 stew rhubarbs, sliced into 4 inch pieces
  • 200gr sugar
  • 1 spoon cinnamon
  • 1 spoon honey
  • 1 spoon grenadine - optional
  • 250gr mascarpone
  • 100gr icing sugar

Method:

  1. Place rhubarb on a large flat baking tray, add sugar, cinnamon, honey and grenadine
  2. Bake in the oven at 170 c, for 10 mins, till rhubarb is tender.
  3. Cool in the fridge for 10 mins
  4. Mix mascarpone with icing sugar

To serve: If you have two fancy wine glasses add rhubarb then mascarpone on top.
