Every man needs to have a quick and simple chocolate dessert up his sleeve to impress or to use as a 'get jail out of jail free' card. This one has rescued me more than once!!
Pastry:
250gr butter
500gr flour
pinch salt
150gr icing sugar
4 egg yolk
50ml water
Sift flour and salt on counter top, make a well in the centre and add butter and sugar. Mix together with your fingers till it looks like breadcrumbs. Add egg yolks, adding drops of water as you go and mix with flour. When all the flour has been used, form the dough into a ball (do not over work). Wrap in cling film and put in fridge for two hours.
Cheaters Tip: Buy frozen short crust pastry
Remove from fridge/wrapper and roll out on floured surface. Roll till thin and large enough to cover tart tin plus three inches over the edges. Roll loosely around rolling pin and then unroll it over tin. Gently press edges into the tin and overlap the edges. Bake at 180c for 15 mins or till lightly brown and leave to cool.
Filling:
390ml cream
25ml liquid glucose or 25ml castor sugar
365gr dark chocolate
55gr butter
Heat cream and glucose till nearly boiling. Break chocolate into large bowl, add cream mix and whisk till chocolate is melted. Add butter and whisk till smooth. Pour chocolate into your baked tart case and chill for two hours until set.
