Basil and Garlic Baked Mussels

  • 2lbs mussels, scrubbed and bearded
  • 5 tablespoons white wine
  • 100grs bread crumbs
  • 50grs basil (fresh)
  • ½ bulb garlic (chopped)
  • 100gr butter (melted)

Method

  • Place mussels in a pot, add wine and 100mls of water.
  • Cover with lid and place over high heat until shells open - 4/5 mins.
  • Drain.
  • Remove mussels from their shell. Discard the shell that had the inner mussel attached, keeping other half. Place mussels on it and arrange shells with mussels on a baking sheet.

Topping

  • Place all remaining ingredients in a liquidizer and blend.
  • Place a little blended stuffing on each mussel half and bake under a hot grill until crisp - 4/5mins.
  • Serve with a salad and fresh lemon.
