Basil and Garlic Baked Mussels
- 2lbs mussels, scrubbed and bearded
- 5 tablespoons white wine
- 100grs bread crumbs
- 50grs basil (fresh)
- ½ bulb garlic (chopped)
- 100gr butter (melted)
Method
- Place mussels in a pot, add wine and 100mls of water.
- Cover with lid and place over high heat until shells open - 4/5 mins.
- Drain.
- Remove mussels from their shell. Discard the shell that had the inner mussel attached, keeping other half. Place mussels on it and arrange shells with mussels on a baking sheet.
Topping
- Place all remaining ingredients in a liquidizer and blend.
- Place a little blended stuffing on each mussel half and bake under a hot grill until crisp - 4/5mins.
- Serve with a salad and fresh lemon.
