Rosemary and Lemon Roast New Potatoes
- 1 lb new potato (washed)
- 2 tablespoons olive oil
- 1 tablespoon sea salt
- 2 tablespoons rosemary chopped
- 1 lemon (rind grated/ juice)
Method:
- preheat oven to 180°C
- place all ingredients in a bowl and mix well
- turn out on to a large sheet of tin foil
- fold foil over to make a parcel
- bake for 50/60minutes to until potatoes are tender
- unwrap the parcel at the table to serve
