Eamonn, a Connemara native, returns to his home county from the bright lights of London where he worked as Bar Manager in Hennessy's Bar, Greenford.

Eamonn previously held positions at Shrubbery Restaurant and Bar in Mission Beach, Queensland and The Shamrock Bar and Restaurant in Roundstone, gathering a wealth of experience in the international cities!

Eamonn teams up with Head Chef Elliot Fox to develop Kirby's Restaurant, which has a new menu using fresh, locally sourced, home cooked food. To Eamonn excellent customer service is key and in his first few weeks has already made positive changes and looks forward on expanding those. "We have a top class chef, menu and location and my ambition is to take Kirby's front of house to the next level and offer a quality of service to compliment the food".
